Dairy FREE Chocolate & Raspberry Bombe

Ganache-glazed chocolate cake bombes are filled with decadent chocolate mousse.

Chocolate Mousse: Melt the chocolate and incorporate into 300g of diluted base. Emulsify them and leave to cool slightly.
Whip on 2nd speed until soft peaks form, approx. 5 – 7 minutes. Add the remaining diluted base. Fold together
Chocolate glaze: Heat the sugar and water to 118 degrees. Heat the harmony classic and add together with cocoa powder.
Pipe chocolate mousse into dome moulds and place a frozen square of raspberry puree in the centre
of the mousse and place a piece of sponge on the base. Freeze til required.
Melt the chocolate glaze ready to glaze the
frozen domes.
Apply the glaze over the top of the domes encasing completely. Finish with chocolate decoration and fresh raspberry.
