Dairy and Gluten FREE Lemon Meringue Pot

Lip-smacking looks and punchy lemon flavour result in a seriously delicious gluten and dairy-free dessert.

Fruit filling : Lemon curd
Crumb Base : Break biscuits and add margarine to make a crumb
Lemon Cream : W T Base 200g, water 100g, icing ,sugar 50g, lemon curd 100g, lemon zest 1
Whip the diluted base on 2nd speed until soft peaks form, approx. 5 – 7 minutes. Fold through zest and curd to form mousse
Meringue Broken meringue pieces
Place crumb in base and tamp down gently in the glass. Pipe on the bottom a layer of lemon mousse alternating with curd and meringue..
