Dairy & Gluten FREE Chocolate & Cherry Mousse Cake

Layers of chocolate mousse and cherry fruit filling make this Chocolate Cherry Mousse Cake the perfect dairy free dessert.

Fruit filling - Cherry puree 50g placed in the mousse
Gluten free sponge - Gluten free cake mix 150g disk
Chocolate mousse - WT Base 200g, water 100g, dark chocolate 350g. Melt the chocolate and incorporate the 300g of diluted base.
Emulsify them and leave to cool slightly. Whip on 2nd speed until soft peaks form, approx. 5 – 7 minutes .the other amount of diluted base.
Fold together
Chocolate glaze - Heat the sugar and water to 118 degrees. Heat the harmony classic and add together with cocoa powder.
Line steel collar with acetate on a board
Place the disk on the bottom of the board and soak in kirsh and stock syrup. Pipe a layer of chocolate mousse with a layer of fruit filling sunk
in the centre. Once set glaze the top of the mousse cake and garnish with fresh cherries.
