Dairy and Gluten FREE Opera Gateaux

The Opera Gateaux is a classic and very elegant layered French cake.

Layers of almond sponge cake, layered with Raspberry ganache and Raspberry bettercreme, finished with an opera glaze and decorated with fresh rasberry and pistachio
Place 300g of gluten free sponge mix on flat baking trays and bake at 190 degrees for 15 minutes.
You will need four in total. Place to one side.
Have your chocolate mousses and raspberry mousse weighed up in 300g bowls ready to make the layers.
At each layer soak the sponge in warm syrup and allow too cool applying before applying mousse layer.
Repeat this process til 4 layers are complete. Press at each stage and allow too cool ensuring they are even..
